before the first round of battle begins, if i use my cleric spell dispell from the main menu, it does not take up one of my lvl 1 spells, but if i use it after the first round of battle from the spell select screen, it does use up 1 lvl 1 spell.

The innate dispel option for Priests can only be used in the first round and is not a spell and does not cost a spell point. The level 1 spell "Konarbona" which can also be used to dispel monster IS a spell and can be used at any time but costs a spell point. The innate dispel is a freebe for the Priest.

Note, however, that the spell "Konarbona" is more powerful than the innate dispel option. So if you want a better chance of getting rid of the undead, it is advisable to use the spell in the first round instead of the innate dispel option.

i noticed that it seems that my lowel priest has less success with the dispell than my higher priest, does it scale in success with the level?

Yes, the probability of dispelling a monster depends on the difference between your level and the monster's level. As I noted before, the spell dispel is more powerful than the innate dispel, so if you REALLY need to get rid of the monster, use the spell.
